WHere is an easy take on a beverage from the seasonal drinks list. This is a batch pre-mixed that is packed full of tastes of the festive period, which makes it perfect for hosting a celebration. Save the extra syrup you can use for morning drinks, desserts, or to mix additional servings of this cocktail.

Makes enough for 10 guests
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Put all the ingredients inside a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, turn off the stove and leave to cool down entirely. Pour to a sealable bottle, close it and store chilled, it can be stored for about four weeks.
For the Batch Mix: Pour all the liquids into one large bottle, allow it to infuse for 60 minutes, then filter it , ideally through muslin, to ensure it's fully clarified.
To serve: Add 85ml of the batch mix into your cocktail shaker filled with ice, and stir carefully for one minute to cool it down. Pour to a frosted cocktail glass or equivalent, garnish with the cranberries and finish with a brief mist of mandarin oil over the drink.
